Title: Lemon Herb Quinoa

Yield: 4 servings
2 c Water
1 c Quinoa, rinsed
1/2 ts Salt; divided
1 tb Minced fresh basil
1 tb Minced fresh cilantro
1 1/2 ts Minced fresh mint
1 ts Grated lemon zest
In a small saucepan, bring water to a boil. Add quinoa
and 1/4 teaspoon salt. Reduce heat; cover and simmer for
12-15 minutes or until liquid is absorbed.
Remove from the heat. Add the basil, cilantro, mint,
lemon zest and remaining salt; fluff with a fork.
