      Title: Roasted Parsnips, Carrots & Red Onion
 Categories: Vegetables
      Yield: 4 servings
 
      2 lg Carrots; in 2" long pieces
      2 lg Parsnips; in 2" long pieces
    3/4 c  Vertically sliced (1/4") red
           - onion
      1 tb Balsamic vinegar
      2 ts Extra virgin olive oil
    1/4 ts Salt
    1/8 ts Black pepper
 
  Set oven @ 425oF/218oC.
  
  Line large baking sheet with foil or spray with nonstick
  cooking spray.
  
  Combine carrots, parsnips, onion, vinegar, oil, salt,
  and pepper in large bowl; toss to coat. Spread in single
  layer on prepared baking sheet.
  
  Roast 25 minutes or until vegetables are tender,
  stirring occasionally.
  
  Yield: 4 servings
