Indian Vegetable Loaf

Title: Vegetable Loaf

Yield: 4 Servings
2 c Carrots; grated
2 c Potatoes;
- cooked, lightly mashed
1 c Green beans;
- chopped, steamed
3 tb Whole wheat flour
1 Onion; minced
2 c Coconut milk or
- vegetable stock
1/2 ts Black pepper powder
5 tb Butter
1 c Paneer; cubed
1 ts Garam masala
1 ts Salt
Melt butter in a pan and saute the onion. Mix in flour and milk. Add
seasoning and cook until thick, stirring constantly to prevent
lumping. Slowly add paneer cubes. Put cooked vegetables into an oiled
baking dish and cover with the sauce. Bake at 350?F for 30 minutes.
