MMMMM----- Recipe via Meal-Master (tm) v8.06

Title: Chicken Tater Tot Casserole
Categories: Poultry, Potatoes, Dairy, Vegetables, Cheese
Yield: 12 servings

21 1/2 oz (2 cans) cream of chicken
- soup; undiluted
1/2 c Milk
1/4 c Butter; diced
3 c Cubed cooked chicken
16 oz Bag peas & carrots; thawed
1 1/2 c Shredded Cheddar cheese;
- divided
32 oz Bag frozen Tater Tots

In a large saucepan, combine the soup, milk and butter.
Cook and stir over medium heat until heated through.
Remove from the heat; stir in the chicken, peas and
carrots, and 1 cup cheese.

Transfer to 2 greased 8" square baking dishes. Top with
Tater Tots.

Cover and freeze 1 casserole for up to 3 months. Bake
the remaining casserole @ 400ºF/205ºC until bubbling,
25-30 minutes. Sprinkle with 1/4 cup cheese; bake until
cheese is melted, about 5 minutes longer.

TO USE FROZEN CASSEROLE: Remove from the freezer 30
minutes before baking (do not thaw). Sprinkle with 1/4
cup cheese. Cover and bake @ 350ºF/175ºC until heated
through, 1 1/2 to 1 3/4 hours.

A nice rotisserie (sp?) chicken for Sam's would be great for that.

I'll try to make this soon. My ham radio club is having a potluck
Christmas dinner and that looks like that will hit the spot. I wonder
if I could stuff that into a 9x13 pan instead of two 8s?

Title: Pork Chop Bake
Categories: Main dish, Appetizers, Pork, Seandennis
Yield: 6 Servings

1 Bag (20 oz) refrigerated
Cooked shredded hash brown
Potatoes
1 Can (11 oz) condensed
Cheddar cheese soup
1/2 c Sour cream
1/2 c Milk
3 c Chopped fresh broccoli
Florets
1 Medium onion, chopped (1/2
Cup)
1 T Olive or vegetable oil
6 Bone-in pork chops (1/2 inch
Thick)
1/2 t Salt
1/4 t Pepper

Heat oven to 350°F. In large bowl, mix potatoes, soup, sour cream,
milk, broccoli and onion. Spoon mixture into ungreased 13x9-inch
(3-quart) glass baking dish. Cover with foil; bake 30 minutes.

Meanwhile, in 12-inch skillet, heat oil over medium-high heat. Add 3
of the pork chops; sprinkle with half of the salt and pepper. Cook 3
to 5 minutes on each side or until pork is browned. Repeat with
remaining pork chops, salt and pepper.

Remove foil from baking dish. Place pork chops evenly on top of
potatoes, overlapping slightly. Bake 25 to 35 minutes longer or until
edges are bubbly and pork is no longer pink in center.

Tips: Skip the pork chops and this casserole becomes a tasty side
dish. Next time, try substituting 6 boneless skinless chicken breasts
for the pork chops.

Do the math - 2 8" X 8" pands have 128 sq in. a 9" X 13" is 117 sq in. So,
you gonna be real close. I'd say it's do-able. And one less dish to wash.

Yield: 8 Servings

32 oz Bag Tater Tots
21 1/2 oz (2 cans) Cream of chicken
- soup; undiluted
1 lb Ham, diced
1/4 c Chopped onion
12 oz Shredded Cheddar cheese

Combine all ingredients, reserving a few tator tots
and 1/2 cup cheese.

Put ingredients into greased casserole.

Put reserved tater tots on top and sprinkle with
reserved cheese.

Bake at 350║F/175║C for 1 hour.

Should be able to fit a double recipe into a 9x13 pan; I do it quite
often. More often I'll double a recipe where a single one calls for a
9x9 pan and put it into a 9x13 one. If ot doesn't quite fit, put the
extras into a smaller dish and have supper for one. (G)
