    Title: Sweet Potato Enchilada Stack
    Categories: Potatoes, Beef, Beans, Chilies, Herbs
    Yield: 6 servings

    1 lg Sweet potato; peeled, cut in
    - 1/2" cubes
    1 tb Water
    1 lb Ground beef
    1 md Onion; chopped
    15 oz Can black beans; rinsed,
    - drained
    10 oz Can enchilada sauce
    2 ts Chilli spice mix
    1/2 ts Dried oregano
    1/2 ts Ground cumin
    3 Flour tortillas; (8")
    2 c Shredded Cheddar cheese

    In a large microwave-safe bowl, combine sweet potato and
    water. Cover and microwave on high for 4-5 minutes or
    until potato is almost tender.

    Meanwhile, in a large skillet, cook beef and onion over
    medium heat until meat is no longer pink, breaking it
    into crumbles; drain. Stir in the beans, enchilada
    sauce, chilli spice, oregano, cumin and sweet potato;
    heat through.

    Place a flour tortilla in a greased 9" deep-dish pie
    plate; layer with a third of the beef mixture and
    cheese. Repeat layers twice. Bake @ 400ºF/205ºC for
    20-25 minutes or until bubbly.

    Title: Chicken Biscuit Casserole
    Categories: Poultry, Vegetables, Cheese, Breads, Dairy
    Yield: 8 servings

    10 3/4 oz Can cream of chicken soup;
    - undiluted
    2/3 c Mayonnaise
    3 ts Worcestershire sauce
    4 c Diced, cooked chicken
    3 c Chopped broccoli; cooked
    1 md Onion, chopped
    1 c Shredded Cheddar cheese
    24 oz (2 tubes) refrigerated
    - buttermilk biscuits
    2 lg Eggs
    1/2 c Sour cream
    2 ts Celery seed
    1 ts Salt

    In a large bowl, combine the soup, mayonnaise and
    Worcestershire sauce. Stir in the chicken, broccoli and
    onion. Transfer to a greased 13" X 9" baking dish.
    Sprinkle with cheese. Cover and bake @ 375ºF/190ºC for
    20 minutes.

    Separate biscuits; cut each in half. Arrange, cut side
    down, over hot chicken mixture.

    In a small bowl, combine the remaining ingredients; pour
    over biscuits. Bake, uncovered, 28-32 minutes longer or
    until biscuits are golden brown and completely baked.
