    Title: Cheesy Fiesta Beef Casserole
    Categories: Beef, Cheese, Chilies, Vegetables, Beans
    Yield: 8 servings

    1 lb Ground beef
    1 md Onion; chopped
    15 oz Can black beans; rinsed,
    - drained
    1 c Picante sauce
    1/2 ts Chilli spice mix
    10 1/2 oz Cream of chicken soup;
    - undiluted
    10 oz Ro*Tel diced tomatoes
    - w/green chilies; undrained
    4 oz Chopped green chilies
    9 3/4 oz Bag nacho-flavored tortilla
    - chips; crushed
    1 c Shredded sharp cheddar
    - cheese
    1 c Shredded Monterey Jack
    - cheese
    Diced avocado and sour
    - cream; opt

    In a large skillet, cook beef and onion over medium heat
    until beef is no longer pink, 6-8 minutes, breaking up
    beef into crumbles; drain. Stir in beans, picante sauce
    and chili powder.

    In a bowl, combine soup, tomatoes and green chilies. In a
    lightly greased 2 1/2 qt. baking dish, layer half the
    chips, beef mixture, soup mixture and cheeses. Repeat
    layers.

    Microwave on medium-high, uncovered, until heated
    through and cheese is melted, about 12 minutes. If
    desired, top with avocado and sour cream.

    Title: Firecracker Casserole
    Categories: Beef, Vegetables, Chilies, Beans, Cheese
    Yield: 8 servings

    2 lb Ground beef
    1 md Onion; chopped
    15 oz Can black beans; rinsed,
    - drained
    2 tb Chilli spice mix
    3 ts Ground cumin
    1/2 ts Salt
    4 (6") flour tortillas
    10 3/4 oz Can cream of mushroom soup;
    - undiluted
    10 oz Can Ro*Tel diced tomatoes &
    - green chilies; undrained
    1 c Shredded cheddar cheese

    In a large skillet, cook beef and onion until the meat
    is no longer pink; drain. Add the beans, chili powder,
    cumin and salt.

    Transfer to a greased 13" X 9" baking dish. Arrange
    tortillas over the top. Combine soup and tomatoes; pour
    over tortillas. Sprinkle with cheese.

    Bake, uncovered, @ 350ºF/175ºC for 25-30 minutes or
    until heated through.
