    Title: Tortilla Pie
    Categories: Beef, Vegetables, Chilies, Cheese, Breads
    Yield: 4 servings

    1/2 lb 90% lean ground beef
    1/2 c Chopped onion
    2 cl Garlic; minced
    1 ts Chilli spice mix
    1/2 ts Ground cumin
    14 1/2 oz Can Mexican diced tomatoes;
    - drained
    3/4 c Ricotta cheese
    1/4 c Shredded mozzarella cheese
    3 tb Minced fresh cilantro;
    - divided
    4 (8") whole wheat tortillas
    1/2 c Shredded Cheddar cheese

    Set oven @ 400oF/205oC.

    In a large skillet, cook and crumble beef with onion and
    garlic over medium heat until no longer pink, 4-6
    minutes. Stir in spices and tomatoes. Bring to a boil;
    remove from heat. In a small bowl, mix ricotta cheese,
    mozzarella cheese and 2 tablespoons cilantro.

    Place 1 tortilla in a 9" round baking pan coated with
    cooking spray. Layer with half the meat sauce, 1
    tortilla, ricotta mixture, another tortilla and
    remaining meat sauce. Top with remaining tortilla;
    sprinkle with cheddar cheese and remaining cilantro.

    Bake, covered, until heated through, 15-20 minutes.

    Title: Cauliflower Casserole
    Categories: Vegetables, Cheese, Dairy, Grains
    Yield: 8 servings

    1 md Head cauliflower; in
    - florets
    1 c Sour cream
    1 c Shredded Cheddar cheese
    1/2 c Crushed cornflakes
    1/4 c Chopped bell pepper
    1/4 c Chopped red bell pepper
    1 ts Salt
    1/4 c Grated Parmesan cheese
    Paprika

    Set oven @ 325ºF/165ºC.

    Place 1" water in a saucepan; add cauliflower. Bring to
    a boil. Reduce heat; cover and simmer until
    crisp-tender, 5-10 minutes. Drain.

    In a large bowl, combine cauliflower, sour cream,
    cheddar cheese, cornflakes, peppers and salt; transfer
    to a greased 2 qt. baking dish. Sprinkle with Parmesan
    cheese and paprika.

    Bake, uncovered, until heated through, 30-35 minutes.
