• Zucchini Pickles

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Zucchini Pickles
    Categories: Pickles, Zucchini
    Yield: 1 Batch

    4 qt Zucchini; unpeeled, sliced
    6 md White onions; chopped
    2 Green peppers; chopped
    3 cl Garlic
    1/3 c Salt
    5 c Sugar
    1 1/2 tb Celery seed
    1 1/2 ts Turmeric
    3 c Vinegar
    2 tb Mustard seed

    Slice zucchini & add chopped onions, peppers, garlic, & salt. Cover
    with ice cubes & mix thoroughly. Let stand 3 hours. Drain thoroughly.
    Combine sugar, spice & vinegar. Pour over vegetables & heat to
    boiling. Pack in hot pint jars & seal. Waterbath 15 minutes.

    He must know I have a huge production of vegetables and I tend to use procedures to conserve them.

    The problem is my zucchinis are so big that slicing them is not enough to make them go into a regular jar. These days I just cut them into cubes and can them at high presure with water and salt. Not glamourous, but a man has to do what a man has to do.

    Yeah, they regularly grow close to the size of a pumpkin. Land here is very good, you could toss a rotten apple and next year there would be an apple tree growing in there :-)

    They aren't bitter at all, and I'd say they have a moderate amount of seeds, but not a whole lot.

    It is a logistics problem :-)

    At the end of the day I need to gather sooo many jars in order to can all of these zucchinies.

    i really want to have a garden again but i'm afraid the growing window is smaller where i live and also it's a ton of work.

    You can always cheat the system and raise some greenhouse up. Even if you don't put much effort into the greenhouse endevour it is very easy to get 2 extra months of gardening, unless your area is very very bad :-)

    It is true it is a lot of work if you are in it alone. It really pays to have somebody else help you out. I also cheat and have a lot of automation in place.I use weed sheet to prevent random weeds from overtaking the harvest area, I have automatic watering, the usual stuff. It is harder to set up than regular harvesting, but once the start of the season is over you work soooo much less.

    i had a greenhouse thing but i never put it together and i tossed it. way too many parts. also with the weather out here it would just blow away
